Raw Lemon Slice ?

I looove lemon slice. So today I decided to have a go at making a healthy version that hopefully would keep the cravings satisfied ?
Well. This slice has done that for sure! ? – delicious!

And no oven required ?

This made 2 x 20cm square slice trays worth. Equalling 70 pieces and at 2 pieces per serve the carbs come in at approx 11g, and calories 180.
A traditional homemade lemon slice would normally come in with 38g of carbs per serve and 450 calories..?‍♀️

What you need is.
1.5 cups of almonds
10 medjool dates
3 cups of unsweetened dessicated coconut
Zest and juice from 1 lemon
1/2 cup coconut oil
1/3 cup of raw honey
2 tablespoons of coconut cream.

Blend almonds and dates in food processor. Add the rest of the ingredients and blend all together.
Firmly pack into trays and then let set in fridge.


3 Tablespoons of coconut butter
3 Tablespoons of coconut oil
3 Tablespoons of coconut cream
Zest and juice from 1 lemon
2 tablespoons of raw honey.

Mix all of the ingredients together besides the zest. And if solid enough add to set slice*.
Then add zest and coconut to top.

*if the icing is too runny sit in fridge for 5 minutes stirring regularly until it has hardened enough to not run off of the slice then add to slice as above.

Leave in fridge for an hour and then cut into pieces and store in an airtight container in the fridge for up to a week.
– It probably wont last that long though! ?
